Flavorful Dinner Delight features golden seared chicken thighs served over herb-infused rice with a creamy garlic thyme sauce.

Ingredients

6 boneless skinless chicken thighs
1 cup long-grain white rice
2 cups chicken broth divided
3 cloves garlic minced
1 small yellow onion finely diced
1 cup heavy cream
2 tablespoons olive oil
1 tablespoon unsalted butter
1 teaspoon fresh thyme leaves
2 tablespoons chopped fresh parsley
Salt to taste
Freshly ground black pepper to taste
1 teaspoon lemon juice

Instructions

  • Season chicken thighs with salt and black pepper.

  • Heat olive oil in a large skillet over medium-high heat and sear chicken 5 to 7 minutes per side until golden and cooked through. Remove and set aside.

  • In the same skillet add butter and diced onion. Cook until softened.

  • Stir in garlic and cook briefly until fragrant.

  • Deglaze pan with a splash of broth, scraping browned bits.

  • Add remaining broth and heavy cream. Stir in thyme and simmer until slightly thickened.

  • Cook rice separately according to package instructions using broth or water.

  • Return chicken to the skillet and simmer in sauce for 5 minutes.

  • Finish with lemon juice and chopped parsley.

  • Serve chicken and sauce over rice.
