6 boneless skinless chicken thighs
1 cup long-grain white rice
2 cups chicken broth divided
3 cloves garlic minced
1 small yellow onion finely diced
1 cup heavy cream
2 tablespoons olive oil
1 tablespoon unsalted butter
1 teaspoon fresh thyme leaves
2 tablespoons chopped fresh parsley
Salt to taste
Freshly ground black pepper to taste
1 teaspoon lemon juice
Season chicken thighs with salt and black pepper.
Heat olive oil in a large skillet over medium-high heat and sear chicken 5 to 7 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet add butter and diced onion. Cook until softened.
Stir in garlic and cook briefly until fragrant.
Deglaze pan with a splash of broth, scraping browned bits.
Add remaining broth and heavy cream. Stir in thyme and simmer until slightly thickened.
Cook rice separately according to package instructions using broth or water.
