3 yellow onions, sliced
3 cloves garlic, minced
1 1/2 pounds chicken breast, diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 cup uncooked orzo
2 cups beef broth
1/2 cup sour cream
1 cup shredded Gruyère cheese
1/2 cup mozzarella cheese
2 tablespoons chopped parsley

Instructions

  • Cook sliced onions in butter and olive oil for about 20–25 minutes until caramelized.

  • Add garlic and cook briefly.

  • Stir in chicken pieces with salt, pepper, and thyme.

  • Add orzo and beef broth and simmer briefly.

  • Stir in sour cream and transfer mixture to a baking dish.

  • Sprinkle cheeses across the top.
