2 tablespoons butter
1 tablespoon olive oil
3 yellow onions, sliced
3 cloves garlic, minced
1 1/2 pounds chicken breast, diced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 cup uncooked orzo
2 cups beef broth
1/2 cup sour cream
1 cup shredded Gruyère cheese
1/2 cup mozzarella cheese
2 tablespoons chopped parsley
Cook sliced onions in butter and olive oil for about 20–25 minutes until caramelized.
Add garlic and cook briefly.
Stir in chicken pieces with salt, pepper, and thyme.
