Garlic Butter Beef Bites with Potatoes is a hearty one-pan meal made with seared steak cubes, crispy baby potatoes, and a rich garlic butter sauce. Perfect for weeknight dinners or casual entertaining.
1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes
1.5 lbs baby potatoes, halved
4 tablespoons unsalted butter
2 tablespoons olive oil
4 cloves garlic, minced
Salt and pepper, to taste
1 tablespoon chopped fresh parsley or thyme
Bring a pot of salted water to a boil. Add halved baby potatoes and simmer for 8–10 minutes until fork-tender. Drain and set aside.
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes cut-side down and cook until golden and crisp, about 5–7 minutes. Remove from skillet.
Season beef cubes with salt and pepper. In the same skillet, add remaining oil and sear beef in batches, 2–3 minutes per side. Remove from skillet.
Lower heat to medium-low. Add butter and garlic to skillet, stirring for 1 minute.
Return beef and potatoes to the skillet. Toss to coat in garlic butter and heat through, 1–2 minutes.
Sprinkle with chopped parsley before serving.
Use ghee or dairy-free butter for a dairy-free version.
Add mushrooms, bell peppers, or zucchini for extra vegetables.
