Garlic Butter Beef Bites with Potatoes is a hearty one-pan meal made with seared steak cubes, crispy baby potatoes, and a rich garlic butter sauce. Perfect for weeknight dinners or casual entertaining.

  • 1.5 lbs sirloin or ribeye steak, cut into 1-inch cubes

  • 1.5 lbs baby potatoes, halved

  • 4 tablespoons unsalted butter

  • 2 tablespoons olive oil

  • 4 cloves garlic, minced

  • Salt and pepper, to taste

  • 1 tablespoon chopped fresh parsley or thyme

Instructions

  • Bring a pot of salted water to a boil. Add halved baby potatoes and simmer for 8–10 minutes until fork-tender. Drain and set aside.

  • Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add potatoes cut-side down and cook until golden and crisp, about 5–7 minutes. Remove from skillet.

  • Season beef cubes with salt and pepper. In the same skillet, add remaining oil and sear beef in batches, 2–3 minutes per side. Remove from skillet.

  • Lower heat to medium-low. Add butter and garlic to skillet, stirring for 1 minute.

  • Return beef and potatoes to the skillet. Toss to coat in garlic butter and heat through, 1–2 minutes.

  • Sprinkle with chopped parsley before serving.

Notes

  • Use ghee or dairy-free butter for a dairy-free version.

  • Add mushrooms, bell peppers, or zucchini for extra vegetables.

  • Store leftovers in the fridge for up to 3 days.
