  • 14 oz pre-cooked sausage (kielbasa, smoked, or Italian), sliced

  • 8 oz pasta (penne, rigatoni, or fettuccine)

  • 3 tbsp unsalted butter

  • 4 garlic cloves, minced

  • ¾ cup heavy cream

  • ¾ cup freshly grated Parmesan cheese

  • Salt and pepper to taste

  • ¼½ cup reserved pasta water

  • Fresh parsley, for garnish

  • Optional: red pepper flakes

Instructions

  • Cook pasta according to package instructions. Reserve 1 cup pasta water. Drain and set aside.

  • In a large skillet, sear sausage slices in a tablespoon of oil or butter over medium heat until golden. Remove and set aside.

  • Melt 3 tablespoons butter in the skillet. Add minced garlic and cook 1–2 minutes until fragrant.

  • Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and whisk until smooth.

  • Add cooked pasta and a splash of pasta water. Toss to coat. Add more water if needed to loosen the sauce.

  • Return sausage to the skillet and stir to combine. Cook 2–3 minutes to heat through.

  • Garnish with parsley, cracked black pepper, and extra Parmesan. Serve hot.

  • Use gluten-free pasta or low-carb substitutes as needed.
