14 oz pre-cooked sausage (kielbasa, smoked, or Italian), sliced
8 oz pasta (penne, rigatoni, or fettuccine)
3 tbsp unsalted butter
4 garlic cloves, minced
¾ cup heavy cream
¾ cup freshly grated Parmesan cheese
Salt and pepper to taste
¼–½ cup reserved pasta water
Fresh parsley, for garnish
Optional: red pepper flakes
Cook pasta according to package instructions. Reserve 1 cup pasta water. Drain and set aside.
In a large skillet, sear sausage slices in a tablespoon of oil or butter over medium heat until golden. Remove and set aside.
Melt 3 tablespoons butter in the skillet. Add minced garlic and cook 1–2 minutes until fragrant.
Stir in heavy cream and bring to a gentle simmer. Add Parmesan cheese and whisk until smooth.
Add cooked pasta and a splash of pasta water. Toss to coat. Add more water if needed to loosen the sauce.
Return sausage to the skillet and stir to combine. Cook 2–3 minutes to heat through.
Garnish with parsley, cracked black pepper, and extra Parmesan. Serve hot.
