A moist and savory chicken meatloaf made with garlic, Parmesan cheese, and Italian herbs. A lighter take on a comfort food classic.
1 lb ground chicken
1/2 cup grated Parmesan cheese
2–3 cloves garlic, minced
1/2 cup Italian breadcrumbs
1/4 cup milk
1 large egg
1 tsp Italian seasoning
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped fresh parsley (optional)
Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.
In a large bowl, mix ground chicken, Parmesan, garlic, egg, breadcrumbs, milk, Italian seasoning, salt, and pepper until just combined.
Shape into a loaf and place on prepared baking sheet or in loaf pan.
Bake for 45–50 minutes or until internal temp reaches 165°F.
Optional: Sprinkle extra Parmesan on top during final 5 minutes.
Let rest for 10 minutes, then slice and serve.
Substitute turkey for chicken if desired.
Add shredded veggies like zucchini for extra nutrition.
Store leftovers in the fridge for 3–4 days or freeze.
