A moist and savory chicken meatloaf made with garlic, Parmesan cheese, and Italian herbs. A lighter take on a comfort food classic.

Ingredients

  • 1 lb ground chicken

  • 1/2 cup grated Parmesan cheese

  • 23 cloves garlic, minced

  • 1/2 cup Italian breadcrumbs

  • 1/4 cup milk

  • 1 large egg

  • 1 tsp Italian seasoning

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1 tbsp chopped fresh parsley (optional)

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.

  • In a large bowl, mix ground chicken, Parmesan, garlic, egg, breadcrumbs, milk, Italian seasoning, salt, and pepper until just combined.

  • Shape into a loaf and place on prepared baking sheet or in loaf pan.

  • Bake for 45–50 minutes or until internal temp reaches 165°F.

  • Optional: Sprinkle extra Parmesan on top during final 5 minutes.

  • Let rest for 10 minutes, then slice and serve.

Notes

  • Substitute turkey for chicken if desired.

  • Add shredded veggies like zucchini for extra nutrition.

  • Store leftovers in the fridge for 3–4 days or freeze.
