Moist and flavorful chicken meatloaf packed with fresh garlic, Parmesan cheese, and herbs, topped with a buttery, golden garlic crust. A lighter twist on the classic comfort dish.

  • lbs ground chicken

  • ¾ cup panko breadcrumbs

  • ½ cup milk

  • 2 large eggs

  • ½ cup grated Parmesan

  • 4 garlic cloves, minced (plus 1 for topping)

  • ½ small onion, grated

  • 2 tbsp chopped parsley or 1 tsp Italian seasoning

  • 1 tsp salt

  • ½ tsp black pepper

  • ¼ tsp crushed red pepper flakes (optional)

Topping:

  • 2 tbsp melted butter

  • 1 garlic clove, minced

  • 2 tbsp grated Parmesan

  • 1 tbsp panko or crushed croutons (optional)

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet with parchment.

  • In a large bowl, combine ground chicken, breadcrumbs, milk, eggs, Parmesan, garlic, onion, herbs, and seasoning.

  • Mix gently until combined. Form into a loaf and place on baking sheet.

  • Bake for 35–40 minutes.

  • Meanwhile, mix topping ingredients in a small bowl.

  • Brush topping over meatloaf and return to oven for 10–15 minutes, until golden and internal temp reaches 165°F.

  • Rest 10 minutes before slicing.

Notes

  • Use ground turkey for a variation.

  • Add lemon zest or herbs for brightness.

  • Freeze baked or unbaked loaf for easy prep.
