1½ lbs ground chicken
¾ cup panko breadcrumbs
½ cup milk
2 large eggs
½ cup grated Parmesan
4 garlic cloves, minced (plus 1 for topping)
½ small onion, grated
2 tbsp chopped parsley or 1 tsp Italian seasoning
1 tsp salt
½ tsp black pepper
¼ tsp crushed red pepper flakes (optional)
Topping:
2 tbsp melted butter
1 garlic clove, minced
2 tbsp grated Parmesan
1 tbsp panko or crushed croutons (optional)
Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
In a large bowl, combine ground chicken, breadcrumbs, milk, eggs, Parmesan, garlic, onion, herbs, and seasoning.
Mix gently until combined. Form into a loaf and place on baking sheet.
Bake for 35–40 minutes.
Meanwhile, mix topping ingredients in a small bowl.
Brush topping over meatloaf and return to oven for 10–15 minutes, until golden and internal temp reaches 165°F.
Rest 10 minutes before slicing.
Use ground turkey for a variation.
Add lemon zest or herbs for brightness.
Freeze baked or unbaked loaf for easy prep.
