Tender chicken and baby potatoes simmered in a creamy garlic-Parmesan sauce. An easy slow cooker meal with deep flavor and simple ingredients.

Ingredients

2.5 lbs chicken thighs (bone-in or boneless)
1.5 lbs baby potatoes, halved
6 cloves garlic, minced
1/2 cup unsalted butter
3/4 cup grated Parmesan cheese
1 cup low-sodium chicken broth
1.5 tsp Italian seasoning
Salt and black pepper to taste
Chopped parsley (optional)

Instructions

  • Pat chicken dry and season with salt, pepper, and ½ tsp Italian seasoning.

  • Optional: Sear chicken in a skillet until golden on both sides.

  • Place potatoes in slow cooker and arrange chicken over the top.

  • Melt butter in a saucepan, stir in garlic and cook for 1–2 minutes.

  • Remove from heat, mix in Parmesan and remaining seasoning.

  • Pour sauce over chicken and potatoes.

  • Add broth around the chicken, avoiding the top.

  • Cover and cook on low for 6–7 hours or high for 3–4 hours.

  • Serve hot with optional parsley garnish.
