Tender chicken and baby potatoes simmered in a creamy garlic-Parmesan sauce. An easy slow cooker meal with deep flavor and simple ingredients.
2.5 lbs chicken thighs (bone-in or boneless)
1.5 lbs baby potatoes, halved
6 cloves garlic, minced
1/2 cup unsalted butter
3/4 cup grated Parmesan cheese
1 cup low-sodium chicken broth
1.5 tsp Italian seasoning
Salt and black pepper to taste
Chopped parsley (optional)
Pat chicken dry and season with salt, pepper, and ½ tsp Italian seasoning.
Optional: Sear chicken in a skillet until golden on both sides.
Place potatoes in slow cooker and arrange chicken over the top.
Melt butter in a saucepan, stir in garlic and cook for 1–2 minutes.
Remove from heat, mix in Parmesan and remaining seasoning.
Pour sauce over chicken and potatoes.
Add broth around the chicken, avoiding the top.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Serve hot with optional parsley garnish.
