2 medium apples, peeled and diced
1 tbsp butter (for apples)
2 tbsp brown sugar (for apples)
½ tsp cinnamon (for apples)
1½ cups all-purpose flour
1 tsp baking powder
¼ tsp baking soda
½ tsp salt
1 tsp cinnamon
Pinch of nutmeg
2 eggs
⅓ cup white sugar
¼ cup brown sugar
¾ cup milk
¼ cup melted butter
1½ tsp vanilla extract
For the glaze:
1 cup powdered sugar
1–2 tbsp milk
½ tsp vanilla extract
Sauté apples with butter, brown sugar, and cinnamon until softened; set aside to cool.
Mix dry ingredients in a large bowl.
In another bowl, whisk eggs, sugars, milk, butter, and vanilla.
Combine wet and dry mixtures, then stir in apples.
Heat and grease waffle iron. Add batter and cook until golden brown.
Let donuts cool on a wire rack.
Whisk glaze ingredients. Dip or drizzle over donuts.
Allow glaze to set before serving.
