3 very ripe bananas, mashed
1/2 cup melted butter or neutral oil
3/4 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups gluten-free all-purpose flour blend
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon xanthan gum if needed
Preheat oven to 350°F and prepare a 9×5-inch loaf pan with grease and parchment.
Mash bananas in a large bowl until smooth.
Stir in melted butter, sugar, eggs, and vanilla.
In another bowl, whisk flour, baking soda, salt, and xanthan gum.
Fold dry ingredients into wet ingredients until just combined.
Pour batter into prepared pan and smooth the top.
Bake 50 to 60 minutes until a toothpick inserted in the center comes out clean.
