Gooey BBQ chicken quesadillas filled with tender shredded chicken, melted cheese, thin red onion, and fresh cilantro inside golden toasted tortillas. Smoky barbecue flavor and stretchy cheese create a warm and satisfying meal.

2 cups cooked shredded chicken
1/2 cup barbecue sauce
4 large flour tortillas
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese
1/3 cup thinly sliced red onion
2 tablespoons chopped fresh cilantro
2 tablespoons butter or cooking oil

Instructions

  • In a bowl combine shredded chicken with barbecue sauce until evenly coated.

  • Heat a large skillet over medium heat and add a small amount of butter or oil.

  • Place one tortilla in the skillet and sprinkle cheese over half of the tortilla.

  • Spread barbecue chicken over the cheese and add sliced red onion.

  • Sprinkle additional cheese and chopped cilantro on top.

  • Fold the tortilla over the filling and press gently with a spatula.

  • Cook for 3 to 4 minutes until the underside turns golden brown.

  • Flip the quesadilla carefully and cook the other side until the cheese melts and the tortilla becomes crisp.

  • Transfer to a cutting board and slice into wedges.

  • Repeat with remaining tortillas and filling and serve warm.
