Ingredients

1 cup dry orzo pasta
1 cup cucumber, diced
1 cup cherry tomatoes, halved
1/2 cup red bell pepper, chopped
1/4 cup red onion, finely sliced
1/2 cup feta cheese, crumbled
1/3 cup Kalamata olives, sliced
1/4 cup fresh parsley, chopped
3 tablespoons olive oil
2 tablespoons lemon juice
1 clove garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Cook orzo in salted boiling water until tender, then drain and cool.
  • Chop cucumber, tomatoes, bell pepper, and onion.
  • Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper to make dressing.
  • Combine orzo, vegetables, olives, and feta in a large bowl.
  • Pour dressing over and toss gently to coat.
  • Add parsley and mix again.
  • Chill for 30 minutes before serving.
