1 lb ground beef (80/20)
1 large yellow onion, thinly sliced
4 slices Swiss cheese
4 slices American cheese
8 slices rye bread (or sourdough)
3 tbsp unsalted butter
Salt and pepper, to taste
In a skillet over medium-low heat, melt 1 tbsp butter and add sliced onions. Cook, stirring often, for 20–25 minutes until caramelized.
Form ground beef into 4 thin oval patties. Season with salt and pepper.
In a skillet, cook patties over medium-high heat for 3–4 minutes per side until browned and cooked through.
Butter one side of each bread slice. On the unbuttered side, layer cheese, a patty, caramelized onions, and more cheese. Top with a second bread slice, buttered side out.
Grill the sandwiches over medium heat, pressing lightly. Cook 3–4 minutes per side until golden brown and cheese is melted.
Let rest 1–2 minutes. Slice and serve warm.
