Ingredients

  • 1 lb ground beef (80/20)

  • 1 large yellow onion, thinly sliced

  • 4 slices Swiss cheese

  • 4 slices American cheese

  • 8 slices rye bread (or sourdough)

  • 3 tbsp unsalted butter

  • Salt and pepper, to taste

Instructions

  • In a skillet over medium-low heat, melt 1 tbsp butter and add sliced onions. Cook, stirring often, for 20–25 minutes until caramelized.

  • Form ground beef into 4 thin oval patties. Season with salt and pepper.

  • In a skillet, cook patties over medium-high heat for 3–4 minutes per side until browned and cooked through.

  • Butter one side of each bread slice. On the unbuttered side, layer cheese, a patty, caramelized onions, and more cheese. Top with a second bread slice, buttered side out.

  • Grill the sandwiches over medium heat, pressing lightly. Cook 3–4 minutes per side until golden brown and cheese is melted.

  • Let rest 1–2 minutes. Slice and serve warm.
