Juicy grilled chicken skewers brushed with rich garlic herb cowboy butter.
2 pounds chicken breast or thighs
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
6 tablespoons butter
4 cloves garlic
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon paprika
1/4 teaspoon red pepper flakes
1 tablespoon parsley
1 tablespoon chives
Cut chicken into cubes and season with olive oil, paprika, garlic powder, salt, and pepper.
Thread chicken onto skewers.
Preheat grill to medium-high heat.
Grill skewers for 10–12 minutes, turning occasionally.
Melt butter in a saucepan and stir in garlic, lemon juice, mustard, paprika, and red pepper flakes.
Remove from heat and add parsley and chives.
Brush cowboy butter over grilled chicken skewers.
Serve immediately.
