1 1/2 pounds boneless skinless chicken breast or thighs
2 tablespoons olive oil
1 tablespoon ranch seasoning mix
3 cloves garlic minced
1 tablespoon lemon juice
1/4 teaspoon black pepper
1/4 teaspoon paprika optional
1/3 cup grated Parmesan cheese
Wooden or metal skewers

Instructions

  • Cut chicken into evenly sized cubes about 1 to 1 1/2 inches.

  • In a bowl mix olive oil, ranch seasoning, garlic, lemon juice, black pepper, and paprika.

  • Add chicken and toss until fully coated. Refrigerate for at least 30 minutes.

  • Preheat grill to medium high heat.

  • Thread chicken pieces onto skewers leaving small spaces between pieces.

  • Place skewers on the grill and cook for 10 to 12 minutes turning occasionally.

  • Sprinkle Parmesan cheese over the chicken during the final minutes of cooking.

  • Remove once chicken reaches 165°F and allow to rest briefly before serving.

Notes
