Grilled Ranch Garlic Parmesan Chicken Skewers are tender cubes of chicken marinated in ranch seasoning, fresh garlic, olive oil, lemon juice, and Parmesan, then grilled until golden and lightly charred.
1 1/2 pounds boneless skinless chicken breasts or thighs, cut into 1 1/2-inch cubes
2 tablespoons olive oil
1 packet (1 ounce) ranch seasoning mix
3 cloves garlic, minced
1/3 cup freshly grated Parmesan cheese
1 tablespoon lemon juice
1/2 teaspoon freshly ground black pepper
1/4 teaspoon salt
Wooden or metal skewers
In a large bowl, mix olive oil, ranch seasoning, garlic, Parmesan, lemon juice, pepper, and salt.
Add chicken cubes and toss until evenly coated.
Cover and refrigerate for at least 30 minutes, up to 4 hours.
Preheat grill to medium-high heat and lightly oil the grates.
Thread chicken onto skewers, leaving small gaps between pieces.
Grill for 10 to 14 minutes, turning every few minutes, until internal temperature reaches 165°F.
Remove from grill and let rest 5 minutes before serving.
