A cozy one-pot meal featuring tender orzo, savory ground beef, and a creamy tomato sauce — perfect for busy weeknights.
1 lb ground beef (80/20)
1 small onion, diced
2 cloves garlic, minced
1 cup orzo pasta
1½ cups crushed tomatoes or tomato passata
2 cups beef or chicken broth
½ cup heavy cream
½ cup grated Parmesan cheese
1 tsp dried oregano
Salt and pepper to taste
Optional: red pepper flakes, fresh basil or parsley for garnish
Heat olive oil in a large skillet over medium heat. Add diced onion and sauté for 3–4 minutes. Add garlic and cook for 30 seconds.
Add ground beef. Cook until browned, breaking it up with a spoon. Drain excess fat.
Stir in crushed tomatoes, oregano, salt, pepper, and red pepper flakes (if using). Simmer for 2 minutes.
Add orzo and broth. Bring to a boil, then reduce heat and cover. Simmer for 10–12 minutes, stirring occasionally.
Once orzo is tender, stir in heavy cream and Parmesan. Simmer 2–3 more minutes.
Adjust seasoning and serve hot, garnished as desired.
Add spinach, mushrooms, or sun-dried tomatoes for variation. Store in fridge up to 4 days. Reheat with a splash of broth or cream.
