A hearty one-pan meal made with ground beef, golden potatoes, and savory seasonings — perfect for easy weeknight dinners.

Ingredients

  • 1 lb ground beef (80/20 or 85/15)

  • 4 medium potatoes, diced (Yukon gold or red)

  • 1 small onion, diced

  • 2 garlic cloves, minced

  • 1 bell pepper or carrot, diced (optional)

  • 1 tbsp olive oil

  • 1 tbsp butter

  • 1 tsp smoked paprika

  • ½ tsp dried thyme or oregano

  • Salt and pepper to taste

  • Optional: Shredded cheese, parsley for garnish

Instructions

  • Heat oil and butter in a skillet. Add potatoes, season with salt and pepper, and cook for 8–10 minutes until golden and tender. Remove from pan.

  • Brown ground beef in the same skillet for 6–8 minutes. Drain excess grease.

  • Add onion, cook 3–4 minutes. Stir in garlic and optional bell pepper, cook another 2 minutes.

  • Season with paprika, thyme, salt, and pepper.

  • Return potatoes to the skillet. Stir and cook for 3–5 minutes until heated through and slightly crisp.

  • Optional: Top with cheese and cover until melted. Garnish with parsley.

Notes

  • Swap in sweet potatoes or cauliflower for variation.

  • Add frozen peas or corn toward the end for texture.

  • Store leftovers in the fridge up to 4 days.
