A hearty one-pan meal made with ground beef, golden potatoes, and savory seasonings — perfect for easy weeknight dinners.
1 lb ground beef (80/20 or 85/15)
4 medium potatoes, diced (Yukon gold or red)
1 small onion, diced
2 garlic cloves, minced
1 bell pepper or carrot, diced (optional)
1 tbsp olive oil
1 tbsp butter
1 tsp smoked paprika
½ tsp dried thyme or oregano
Salt and pepper to taste
Optional: Shredded cheese, parsley for garnish
Heat oil and butter in a skillet. Add potatoes, season with salt and pepper, and cook for 8–10 minutes until golden and tender. Remove from pan.
Brown ground beef in the same skillet for 6–8 minutes. Drain excess grease.
Add onion, cook 3–4 minutes. Stir in garlic and optional bell pepper, cook another 2 minutes.
Season with paprika, thyme, salt, and pepper.
Return potatoes to the skillet. Stir and cook for 3–5 minutes until heated through and slightly crisp.
Optional: Top with cheese and cover until melted. Garnish with parsley.
Swap in sweet potatoes or cauliflower for variation.
Add frozen peas or corn toward the end for texture.
Store leftovers in the fridge up to 4 days.
