A cozy, weeknight-friendly Ground Turkey Sweet Potato Bake featuring seasoned ground turkey, tender sweet potatoes, and fresh veggies baked to golden perfection. Perfect for meal prep or an easy dinner.
1 lb ground turkey
2 medium sweet potatoes, peeled and diced
1 small onion, chopped
2 cloves garlic, minced
1 red bell pepper, chopped
2 cups fresh spinach
1 tbsp olive oil
1 tsp paprika
1/2 tsp ground cumin
Salt and black pepper, to taste
1/2 cup shredded cheese (optional)
1 egg, lightly beaten (optional)
Preheat oven to 375°F (190°C).
Heat olive oil in a skillet over medium heat. Sauté onion 4–5 minutes.
Add garlic and bell pepper; cook 2 minutes more.
Add ground turkey, breaking it up as it cooks. Brown for 6–8 minutes.
Season with paprika, cumin, salt, and pepper.
Stir in spinach until wilted. Remove from heat.
Steam or microwave diced sweet potatoes for 4–5 minutes until slightly tender.
In a large bowl, mix turkey mixture, sweet potatoes, and egg if using.
Transfer to a greased 9×13-inch baking dish. Top with cheese if desired.
Bake for 30–35 minutes until golden and fully cooked.
Let cool 5–10 minutes before serving.
