A hearty casserole of ground beef, thin-sliced potatoes, onions, creamy sauce, and melted cheese — baked until golden and bubbly. A family favorite for cozy dinners.

Ingredients

  • 1.5 lbs ground beef

  • 1 medium onion, diced

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp paprika

  • 56 medium russet potatoes, thinly sliced

  • 1 can (10.5 oz) cream of mushroom or chicken soup

  • 1/2 cup milk

  • 2 cups shredded cheddar cheese

  • Butter or oil for greasing pan

Instructions

  • Preheat oven to 375°F. Grease a 9×13-inch baking dish.

  • Brown ground beef in a skillet. Add onions and cook until soft. Season with salt, pepper, garlic powder, and paprika.

  • In a bowl, mix soup and milk until smooth.

  • Layer sliced potatoes in baking dish, followed by beef mixture and soup. Repeat layers and top with remaining sauce.

  • Sprinkle cheddar cheese on top.

  • Cover with foil and bake for 60 minutes. Uncover and bake 20–25 minutes more until bubbly and potatoes are tender.

  • Let rest for 10 minutes before serving.

Notes

  • Add corn, peas, or spinach to the beef layer.

  • Use cream of chicken for a slightly lighter flavor.

  • Swap in plant-based beef for a vegetarian version.
