Hamburgers / Juicy Lucy Cheddar Burgers feature seasoned ground beef patties stuffed with sharp cheddar cheese, cooked until juicy with a molten center and served on toasted buns.
1 1/2 pounds ground beef 80/20 blend
4 ounces sharp cheddar cheese cut into small squares
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
4 burger buns
1 tablespoon neutral oil if using skillet
Optional toppings lettuce tomato onion pickles mustard mayonnaise
Divide ground beef into 8 equal portions and shape into thin patties slightly wider than the buns.
Place cheddar in the center of 4 patties leaving a border around the edges.
Top with remaining patties and press edges firmly to seal completely.
Season both sides with salt and pepper.
Heat skillet or grill to medium heat and lightly oil if needed.
Cook patties 4 to 5 minutes per side until internal temperature reaches 160°F.
Toast buns lightly during the final minute of cooking.
Rest burgers for several minutes before assembling with desired toppings
