Tender slow cooker chicken cooked with tomatoes, garlic, lime, and taco spices for healthy tacos.
2 pounds boneless skinless chicken breasts
1 can diced tomatoes with green chilies
1/2 cup chicken broth
3 cloves garlic, minced
1 small onion, chopped
1 tablespoon lime juice
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped cilantro
Place chicken in the bottom of the crockpot.
Add onion and garlic.
Mix diced tomatoes, broth, lime juice, chili powder, cumin, paprika, salt, and pepper.
Pour the mixture over the chicken.
Cover and cook on low for 6–7 hours or high for 3–4 hours.
Remove chicken and shred with two forks.
Return the shredded chicken to the crockpot and mix with the sauce.
Cook uncovered for 10 minutes before serving.
Serve in tortillas, taco bowls, or lettuce wraps.
