A light and healthy Mediterranean potato salad made with fresh vegetables, olive oil, lemon, and herbs.

Ingredients

1 1/2 pounds potatoes
1 cup cherry tomatoes
1 cup cucumber
1/4 cup red onion
1/4 cup olives
3 tablespoons olive oil
2 tablespoons lemon juice
2 cloves garlic
2 tablespoons parsley
1 teaspoon oregano
3/4 teaspoon salt
1/2 teaspoon pepper
1/3 cup feta (optional)

Instructions

  • Boil potatoes until tender, then drain and cool slightly.
  • Whisk olive oil, lemon juice, garlic, salt, pepper, and oregano.
