Ingredients

2 carrots, sliced
1 zucchini, sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, cut into wedges
1 cup broccoli florets
3 tablespoons olive oil
2 cloves garlic, minced
1 teaspoon chopped fresh rosemary
1 teaspoon chopped fresh thyme
Salt to taste
Black pepper to taste
Fresh parsley for garnish

Instructions

  • Preheat oven to 425°F.

  • Wash, dry, and cut all vegetables into uniform pieces.

  • Place vegetables in a large bowl and toss with olive oil.

  • Add garlic, rosemary, thyme, salt, and pepper, then toss again.

  • Spread vegetables in a single layer on a lined baking sheet.
