2 tablespoons olive oil
2 cloves garlic, minced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 medium zucchini, sliced into half-moons
1 cup broccoli florets
1 medium carrot, thinly sliced
1/2 red onion, sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh lemon juice
Wash and dry all vegetables thoroughly.
Slice peppers, zucchini, carrot, and onion evenly and cut broccoli into small florets.
Heat a large skillet over medium heat and add olive oil.
Add carrots and broccoli and cook for 3 to 4 minutes.
Add onion and bell peppers and cook for another 3 minutes.
Stir in zucchini and garlic and cook for 2 to 3 minutes until crisp-tender.
Season with salt and black pepper.
Remove from heat and drizzle with lemon juice before serving.
