1 pound gnocchi
4 ounces smoked salmon
1 tablespoon olive oil
1 tablespoon butter
2 cloves garlic
1 shallot
1/2 cup Greek yogurt
1/4 cup cream
1/2 cup broth
1 tablespoon lemon zest
2 tablespoons lemon juice
1 cup spinach
1/4 cup Parmesan cheese
Cook gnocchi until tender and set aside.
Sauté shallot and garlic in oil and butter.
Add broth and simmer briefly.
Stir in yogurt and cream until smooth.
Add lemon zest and juice.
Toss gnocchi in sauce and add spinach.
Fold in smoked salmon and Parmesan, then serve.
