3 cups cooked rotini pasta
2 cups roasted corn kernels
1/2 cup plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons lime juice
1 tablespoon olive oil
1 garlic clove minced
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 cup finely chopped red onion
1/3 cup chopped cilantro
1/2 cup crumbled cotija cheese
Salt to taste
Cook pasta in salted boiling water until tender but firm. Drain and cool.
Roast or sauté corn until lightly charred and fragrant. Let cool.
In a bowl whisk Greek yogurt, mayonnaise, lime juice, olive oil, garlic, chili powder, smoked paprika, and salt.
In a large bowl combine pasta, corn, red onion, cilantro, and half the cheese.
Pour dressing over the mixture and toss gently until evenly coated.
