Healthy Street Corn Pasta Salad combines roasted corn, tender pasta, creamy lime dressing, herbs, and crumbly cheese in a fresh and satisfying dish inspired by classic street corn flavors.

Ingredients

3 cups cooked rotini pasta
2 cups roasted corn kernels
1/2 cup plain Greek yogurt
2 tablespoons mayonnaise
2 tablespoons lime juice
1 tablespoon olive oil
1 garlic clove minced
1/2 teaspoon chili powder
1/2 teaspoon smoked paprika
1/4 cup finely chopped red onion
1/3 cup chopped cilantro
1/2 cup crumbled cotija cheese
Salt to taste

Instructions

  • Cook pasta in salted boiling water until tender but firm. Drain and cool.

  • Roast or sauté corn until lightly charred and fragrant. Let cool.

  • In a bowl whisk Greek yogurt, mayonnaise, lime juice, olive oil, garlic, chili powder, smoked paprika, and salt.

  • In a large bowl combine pasta, corn, red onion, cilantro, and half the cheese.

  • Pour dressing over the mixture and toss gently until evenly coated.

  • Rest the salad for about 10 to 15 minutes so flavors blend.

  • Sprinkle remaining cheese and additional cilantro on top before serving.

Notes

Charring the corn adds deeper flavor. Whole-grain pasta adds extra fiber. A small squeeze of lime before serving brightens the dish.
