A fresh and creamy pasta salad inspired by street corn, made with corn, lime, and a lighter yogurt-based dressing.
12 ounces pasta
2 cups corn
1/2 cup Greek yogurt
2 tablespoons mayonnaise
2 tablespoons lime juice
1 clove garlic
1 teaspoon chili powder
1/4 cup cotija cheese
Cook and cool pasta.
Prepare corn and lightly char if possible.
Mix yogurt, mayo, lime juice, garlic, and spices.
Toss pasta with corn and dressing.
Add cheese and herbs, then chill before serving.
