Healthy Street Corn Pasta Salad combines tender pasta, roasted corn, creamy lime yogurt dressing, herbs, and crumbly cheese for a refreshing and flavorful dish inspired by street corn.
8 ounces rotini or fusilli pasta
2 cups corn kernels fresh or frozen
1/2 cup plain Greek yogurt
1 tablespoon olive oil
2 tablespoons lime juice
1 clove garlic minced
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup crumbled cotija cheese or feta
1/4 cup chopped cilantro
1/4 cup finely chopped red onion
Cook pasta according to package instructions until tender, then drain and cool.
Grill or sauté corn until lightly charred.
In a bowl whisk together Greek yogurt, olive oil, lime juice, garlic, chili powder, salt, and pepper.
Add cooled pasta and toss to coat with dressing.
Stir in corn, red onion, and cilantro.
Fold in crumbled cheese.
Refrigerate for at least 30 minutes before serving.
Grilled corn adds extra flavor. Whole wheat pasta can be used for additional fiber.
