Ingredients

8 ounces rotini or fusilli pasta
2 cups corn kernels fresh or frozen
1/2 cup plain Greek yogurt
1 tablespoon olive oil
2 tablespoons lime juice
1 clove garlic minced
1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup crumbled cotija cheese or feta
1/4 cup chopped cilantro
1/4 cup finely chopped red onion

Instructions

  • Cook pasta according to package instructions until tender, then drain and cool.

  • Grill or sauté corn until lightly charred.

  • In a bowl whisk together Greek yogurt, olive oil, lime juice, garlic, chili powder, salt, and pepper.

  • Add cooled pasta and toss to coat with dressing.
