2 pounds baby potatoes, halved
3 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1/4 cup parsley
2 tablespoons dill
2 tablespoons chives
2 tablespoons lemon juice
1 teaspoon Dijon mustard
1/4 cup red onion (optional)
1 tablespoon capers (optional)

Instructions

  • Preheat oven to 425°F.
  • Toss potatoes with oil, garlic, salt, and pepper.
  • Roast for 30–40 minutes until golden and tender.
  • Mix herbs, lemon juice, and mustard in a bowl.
  • Combine warm potatoes with herb mixture.
