Juicy garlic butter beef bites slow-cooked to tender perfection—high in protein, low in effort, and packed with savory, comforting flavor.
2–2.5 lb beef chuck roast, cut into 1-inch cubes 6 tablespoons unsalted butter 6 cloves garlic, minced ½ cup low-sodium beef broth 1 tablespoon Worcestershire sauce 1 tablespoon low-sodium soy sauce 1 teaspoon smoked paprika 1 teaspoon dried thyme 1 teaspoon dried rosemary ½ teaspoon black pepper Pinch red pepper flakes (optional) Chopped parsley, for garnish
Cut beef into 1-inch cubes and trim excess fat. Optional: Sear beef cubes in a skillet for 2–3 minutes per side. Add beef, butter, garlic, broth, Worcestershire, soy sauce, and seasonings to slow cooker. Cover and cook on Low for 6–7 hours or High for 3.5–4 hours, until tender. Taste and adjust seasoning if needed. Garnish with chopped parsley before serving.
Optional searing adds flavor but can be skipped. Store leftovers in the fridge for up to 4 days or freeze up to 3 months. Serve with mashed potatoes, noodles, or low-carb sides like cauliflower rice. To lighten, use olive oil or ghee instead of all butter.
