1.5 lbs ground beef
1 medium onion, diced
4 medium russet or Yukon Gold potatoes, thinly sliced
1 can (10.5 oz) cream of mushroom soup
1/2 cup milk
1 1/2 cups shredded cheddar cheese
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
Nonstick cooking spray
Preheat oven to 375°F. Spray a 9×13-inch dish with nonstick spray.
In a skillet, brown ground beef with onion. Season with salt, pepper, and garlic powder. Drain excess fat.
Layer half the potatoes in the dish, followed by half the beef mixture. Repeat layers.
Whisk together cream of mushroom soup and milk. Pour over the casserole.
Sprinkle cheddar cheese evenly over the top.
Cover with foil and bake for 60 minutes. Remove foil and bake another 15–20 minutes until cheese is bubbly and potatoes are tender.
