Hobo Casserole is a hearty, creamy ground beef bake made with thinly sliced potatoes, cheese, and savory soup. This budget-friendly dinner is easy to assemble and perfect for family meals or potlucks.
1 lb ground beef
1 small onion, diced
4–5 medium russet potatoes, thinly sliced
1 can (10.5 oz) cream of mushroom soup
½ cup milk
2 cups shredded cheddar cheese
½ tsp garlic powder
Salt and pepper to taste
Optional: parsley for garnish
Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.
In a skillet, cook beef and onion over medium heat until browned. Drain fat and season with garlic powder, salt, and pepper.
In a bowl, whisk together soup and milk until smooth.
Layer half the potatoes in the casserole dish.
Add half the beef mixture and drizzle some soup mixture.
Repeat layers with remaining potatoes, beef, and soup.
Top with shredded cheese.
Cover with foil and bake for 45 minutes.
Remove foil and bake an additional 20–25 minutes until bubbly and golden.
Let rest 5–10 minutes before serving.
