Hobo Casserole is a hearty, creamy ground beef bake made with thinly sliced potatoes, cheese, and savory soup. This budget-friendly dinner is easy to assemble and perfect for family meals or potlucks.

Ingredients

  • 1 lb ground beef

  • 1 small onion, diced

  • 45 medium russet potatoes, thinly sliced

  • 1 can (10.5 oz) cream of mushroom soup

  • ½ cup milk

  • 2 cups shredded cheddar cheese

  • ½ tsp garlic powder

  • Salt and pepper to taste

  • Optional: parsley for garnish

Instructions

  • Preheat oven to 375°F (190°C). Grease a 9×13-inch casserole dish.

  • In a skillet, cook beef and onion over medium heat until browned. Drain fat and season with garlic powder, salt, and pepper.

  • In a bowl, whisk together soup and milk until smooth.

  • Layer half the potatoes in the casserole dish.

  • Add half the beef mixture and drizzle some soup mixture.

  • Repeat layers with remaining potatoes, beef, and soup.

  • Top with shredded cheese.

  • Cover with foil and bake for 45 minutes.

  • Remove foil and bake an additional 20–25 minutes until bubbly and golden.

  • Let rest 5–10 minutes before serving.

  • Use frozen hash browns as a shortcut.

  • Swap ground turkey or pork for beef.
