A classic homemade strawberry tart with a buttery crust, smooth vanilla custard, and fresh glazed strawberries.

Ingredients

1 1/4 cups all-purpose flour
1/2 cup butter
1/4 cup sugar
1 egg yolk
2 tablespoons cold water
2 cups milk
4 egg yolks
1/2 cup sugar
1/4 cup cornstarch
1 teaspoon vanilla
2 tablespoons butter
2 cups strawberries
1/4 cup strawberry jam
1 tablespoon water

Instructions

  • Mix flour and sugar, then cut in butter and add egg yolk and water to form dough.
  • Chill dough, roll out, and press into tart pan.
  • Blind bake at 375°F until golden, then cool.
  • Heat milk and mix with egg yolks, sugar, and cornstarch.
  • Cook until thick, then add vanilla and butter.
  • Spread custard into crust.
  • Arrange strawberries on top.
  • Brush with warmed jam glaze.
  • Chill before serving.

Notes

Use cold butter for a crisp crust. Chill well for clean slices.
