Sweet honey barbecue chicken served with crispy roasted garlic Parmesan potatoes.
4 chicken thighs or breasts
1/2 cup barbecue sauce
2 tablespoons honey
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1½ pounds potatoes
3 tablespoons olive oil
4 cloves garlic
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/3 cup Parmesan cheese
2 tablespoons parsley
Preheat oven to 400°F.
Toss potatoes with olive oil, garlic, salt, pepper, and paprika.
Spread potatoes on a baking sheet and roast for 15 minutes.
Mix barbecue sauce, honey, olive oil, paprika, garlic powder, salt, and pepper.
Add chicken to the pan and coat with sauce.
Roast chicken and potatoes for 20–25 minutes.
Turn potatoes halfway through cooking.
Sprinkle Parmesan and parsley over potatoes before serving.
Chicken thighs remain especially juicy and hold the barbecue glaze well.
