Honey Glazed Carrots & Green Beans is a colorful side dish featuring tender carrots and crisp green beans coated in a light buttery honey glaze with garlic and a touch of lemon.
4 medium carrots, peeled and sliced diagonally
12 ounces fresh green beans, trimmed
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
2 to 3 tablespoons honey
Salt to taste
Freshly ground black pepper to taste
1 teaspoon fresh lemon juice
Optional fresh thyme or parsley for garnish
Bring a large pot of salted water to a boil. Add carrots and cook for 4 minutes.
Add green beans and cook for 2 to 3 minutes more until slightly tender.
Drain and transfer vegetables to ice water. Drain again and pat dry.
In a large skillet over medium heat, melt butter with olive oil.
Add garlic and cook for 30 seconds until fragrant.
Add carrots and green beans and sauté for 5 to 7 minutes.
Drizzle honey over vegetables and reduce heat to medium-low.
Cook for 3 to 5 minutes, stirring frequently, until glaze thickens.
Season with salt, pepper, and lemon juice. Serve warm.
