Honey Roasted Carrots with Feta and Dill is a sweet and savory spring side dish featuring caramelized carrots, creamy feta, and fresh herbs.

Ingredients

2 pounds carrots peeled and trimmed
2 tablespoons olive oil
2 tablespoons honey
Three quarters teaspoon salt
Half teaspoon black pepper
Half cup crumbled feta cheese
2 tablespoons fresh dill chopped
Optional squeeze of lemon juice

Optional toasted walnuts for garnish

Instructions

  • Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.

  • Peel and cut carrots evenly, leaving thin ones whole and halving thicker ones.

  • Toss carrots with olive oil honey salt and pepper until evenly coated.

  • Arrange in a single layer on baking sheet.

  • Roast for 20 to 25 minutes turning halfway through until tender and lightly caramelized.

  • Remove from oven and let cool slightly.

  • Transfer to serving platter and sprinkle with crumbled feta and fresh dill.

  • Add a light squeeze of lemon juice if desired and serve warm.
