Honey Roasted Carrots with Feta and Dill is a sweet and savory spring side dish featuring caramelized carrots, creamy feta, and fresh herbs.
2 pounds carrots peeled and trimmed
2 tablespoons olive oil
2 tablespoons honey
Three quarters teaspoon salt
Half teaspoon black pepper
Half cup crumbled feta cheese
2 tablespoons fresh dill chopped
Optional squeeze of lemon juice
Optional toasted walnuts for garnish
Preheat oven to 400 degrees Fahrenheit and line a baking sheet with parchment paper.
Peel and cut carrots evenly, leaving thin ones whole and halving thicker ones.
Toss carrots with olive oil honey salt and pepper until evenly coated.
Arrange in a single layer on baking sheet.
Roast for 20 to 25 minutes turning halfway through until tender and lightly caramelized.
Remove from oven and let cool slightly.
Transfer to serving platter and sprinkle with crumbled feta and fresh dill.
Add a light squeeze of lemon juice if desired and serve warm.
