4 bone-in chicken thighs or breasts
2 tablespoons olive oil
3 tablespoons unsalted butter, divided
4 cloves garlic, minced
1 tablespoon fresh thyme, chopped
1 tablespoon fresh parsley, chopped
1 teaspoon fresh rosemary, chopped
1/2 cup chicken broth
Salt and black pepper to taste
2 pounds Yukon Gold or Russet potatoes, peeled and cubed
1/2 cup heavy cream, warmed
1/4 cup whole milk, warmed

Instructions

  • Pat chicken dry and season with salt, pepper, and herbs.

  • Heat olive oil and 1 tablespoon butter in a skillet over medium heat.

  • Sear chicken for 5 to 7 minutes per side until golden.

  • Add garlic and cook briefly, then pour in broth. Cover and cook until internal temperature reaches 165°F.

  • Boil potatoes in salted water for 15 to 20 minutes until tender. Drain thoroughly.

  • Mash potatoes with remaining butter, warm cream, and milk until smooth. Season to taste.

  • Rest chicken briefly, then serve over mashed potatoes with pan juices spooned on top.
