Italian Pasta Salad is a refreshing cold pasta dish made with tender pasta, fresh vegetables, mozzarella cheese, olives, and tangy Italian dressing.
12 ounces rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup sliced black olives
1/2 cup mozzarella cubes or mozzarella balls
1/4 cup red onion, finely chopped
3/4 cup Italian dressing
2 tablespoons chopped fresh parsley or basil
Salt to taste
Black pepper to taste
Bring a large pot of salted water to a boil and cook the pasta until al dente.
Drain the pasta and rinse briefly under cool water to stop cooking.
Transfer the cooled pasta to a large mixing bowl.
Add cherry tomatoes, cucumber, red onion, and sliced olives.
Add mozzarella cheese to the bowl.
Pour Italian dressing over the salad and toss gently.
Sprinkle fresh herbs and mix lightly.
Season with salt and black pepper to taste.
Refrigerate for at least 30 minutes before serving.
Add extra dressing just before serving if the pasta absorbs too much while chilling.
