Italian Pasta Salad is a refreshing cold pasta dish made with tender pasta, fresh vegetables, mozzarella cheese, olives, and tangy Italian dressing.

Ingredients

12 ounces rotini pasta
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup sliced black olives
1/2 cup mozzarella cubes or mozzarella balls
1/4 cup red onion, finely chopped
3/4 cup Italian dressing
2 tablespoons chopped fresh parsley or basil
Salt to taste
Black pepper to taste

Instructions

  • Bring a large pot of salted water to a boil and cook the pasta until al dente.

  • Drain the pasta and rinse briefly under cool water to stop cooking.

  • Transfer the cooled pasta to a large mixing bowl.

  • Add cherry tomatoes, cucumber, red onion, and sliced olives.

  • Add mozzarella cheese to the bowl.

  • Pour Italian dressing over the salad and toss gently.

  • Sprinkle fresh herbs and mix lightly.

  • Season with salt and black pepper to taste.

  • Refrigerate for at least 30 minutes before serving.

Notes

Add extra dressing just before serving if the pasta absorbs too much while chilling.
