Tender grilled chicken pieces coated in barbecue sauce and cooked on skewers until lightly charred and juicy.

1 1/2 pounds chicken breast or thighs cut into cubes
2 tablespoons olive oil
1 teaspoon paprika
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon apple cider vinegar
3/4 cup barbecue sauce

Instructions

  • Soak wooden skewers in water if using.

  • Cut chicken into evenly sized cubes.

  • Mix olive oil, paprika, garlic powder, onion powder, salt, pepper, and vinegar.

  • Toss chicken in the marinade and rest for 20–30 minutes.

  • Preheat grill to medium-high heat.

  • Thread chicken onto skewers.

  • Grill for about 10–12 minutes turning occasionally.

  • Brush barbecue sauce onto chicken during the final minutes.

  • Cook until chicken reaches 165°F internally.

  • Rest briefly and serve warm.
