3 to 4 pounds beef brisket
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
1 tablespoon avocado oil
1 large yellow onion, sliced
4 garlic cloves, minced
1 cup low-sodium beef broth
2 tablespoons tomato paste
1 tablespoon apple cider vinegar
1 teaspoon smoked paprika
1 teaspoon dried thyme
2 bay leaves
Pat brisket dry and trim excess thick fat, leaving a thin fat cap.
Season all sides with salt and pepper.
Heat avocado oil in a skillet over medium-high heat and sear brisket 4 to 5 minutes per side until browned.
Place sliced onions in the bottom of the crock pot and set brisket on top.
