A creamy and bright Lemon Chicken Gnocchi made with tender chicken, soft gnocchi, and a rich lemon Parmesan sauce.
1 pound chicken breast, cubed
1 pound gnocchi
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup Parmesan cheese
1 tablespoon lemon zest
2 tablespoons lemon juice
2 cups spinach
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper
Heat olive oil and cook chicken until golden and fully cooked. Remove and set aside.
Melt butter in the same pan and sauté garlic briefly.
Add chicken broth and simmer for 2 minutes.
Stir in heavy cream and Parmesan cheese until smooth.
Add lemon zest and lemon juice.
Add gnocchi and cook until tender.
Return chicken to the pan and stir in spinach until wilted.
Adjust seasoning and serve warm.
Do not overcook gnocchi to maintain texture. Add extra broth if sauce thickens too much.
