A creamy and bright Lemon Chicken Gnocchi made with tender chicken, soft gnocchi, and a rich lemon Parmesan sauce.

Ingredients

1 pound chicken breast, cubed
1 pound gnocchi
2 tablespoons olive oil
2 tablespoons butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup Parmesan cheese
1 tablespoon lemon zest
2 tablespoons lemon juice
2 cups spinach
1 teaspoon Italian seasoning
1/2 teaspoon salt
1/2 teaspoon pepper

Instructions

  • Heat olive oil and cook chicken until golden and fully cooked. Remove and set aside.

  • Melt butter in the same pan and sauté garlic briefly.

  • Add chicken broth and simmer for 2 minutes.

  • Stir in heavy cream and Parmesan cheese until smooth.

  • Add lemon zest and lemon juice.

  • Add gnocchi and cook until tender.

  • Return chicken to the pan and stir in spinach until wilted.

  • Adjust seasoning and serve warm.

Notes

Do not overcook gnocchi to maintain texture. Add extra broth if sauce thickens too much.
