A warm, satisfying one-pan bake with chicken, potatoes, ranch flavor, melted cheddar, crispy bacon, and green onions. Perfect for easy dinners or make-ahead meals.

2 lbs russet potatoes, diced
1.5 lbs boneless skinless chicken breasts, cubed
2 tbsp olive oil
1 packet ranch seasoning
1 tsp garlic powder
½ tsp paprika
1½ cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
2 green onions, thinly sliced
Optional: sour cream or ranch dressing, for topping

Instructions

  • Preheat oven to 400°F (200°C).

  • In a large bowl, toss chicken, potatoes, olive oil, ranch seasoning, garlic powder, and paprika.

  • Spread in a greased 9×13-inch baking dish in a single layer.

  • Bake for 25–30 minutes, stirring halfway through.

  • Check that chicken is cooked and potatoes are tender.

  • Add cheese and bacon, then bake for 5–7 more minutes.

  • Top with green onions and serve with optional sour cream or ranch.
