A warm, satisfying one-pan bake with chicken, potatoes, ranch flavor, melted cheddar, crispy bacon, and green onions. Perfect for easy dinners or make-ahead meals.
2 lbs russet potatoes, diced
1.5 lbs boneless skinless chicken breasts, cubed
2 tbsp olive oil
1 packet ranch seasoning
1 tsp garlic powder
½ tsp paprika
1½ cups shredded cheddar cheese
6 slices bacon, cooked and crumbled
2 green onions, thinly sliced
Optional: sour cream or ranch dressing, for topping
Preheat oven to 400°F (200°C).
In a large bowl, toss chicken, potatoes, olive oil, ranch seasoning, garlic powder, and paprika.
Spread in a greased 9×13-inch baking dish in a single layer.
Bake for 25–30 minutes, stirring halfway through.
Check that chicken is cooked and potatoes are tender.
Add cheese and bacon, then bake for 5–7 more minutes.
Top with green onions and serve with optional sour cream or ranch.
