Low-Calorie Air Fryer Eggplant is a simple vegetable dish made with lightly seasoned eggplant slices cooked until golden and tender using minimal oil. The air fryer creates a crisp surface while keeping the interior soft.

Ingredients

1 large eggplant sliced into rounds
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons grated Parmesan cheese optional
1 tablespoon chopped parsley optional

Instructions

  • Slice eggplant into even rounds and sprinkle both sides with salt. Let rest for 15 minutes.

  • Pat slices dry with paper towels.

  • Toss eggplant with olive oil, garlic powder, paprika, and black pepper.

  • Preheat air fryer to 375°F or 190°C.

  • Arrange eggplant slices in a single layer inside the basket.

  • Cook for 8 minutes, flip slices, then cook another 6 to 8 minutes until golden and tender.

  • Transfer to a plate and sprinkle with Parmesan cheese and parsley if desired.

Notes

Do not overcrowd the air fryer basket. Cooking in batches helps the eggplant brown evenly.
