Low-Calorie Air Fryer Eggplant is a simple vegetable dish made with lightly seasoned eggplant slices cooked until golden and tender using minimal oil. The air fryer creates a crisp surface while keeping the interior soft.
1 large eggplant sliced into rounds
1 tablespoon olive oil
1 teaspoon garlic powder
1 teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
2 tablespoons grated Parmesan cheese optional
1 tablespoon chopped parsley optional
Slice eggplant into even rounds and sprinkle both sides with salt. Let rest for 15 minutes.
Pat slices dry with paper towels.
Toss eggplant with olive oil, garlic powder, paprika, and black pepper.
Preheat air fryer to 375°F or 190°C.
Arrange eggplant slices in a single layer inside the basket.
Cook for 8 minutes, flip slices, then cook another 6 to 8 minutes until golden and tender.
Transfer to a plate and sprinkle with Parmesan cheese and parsley if desired.
Do not overcrowd the air fryer basket. Cooking in batches helps the eggplant brown evenly.
