A rich and creamy one-skillet pasta dish with juicy seared chicken, sun-dried tomatoes, garlic, and parmesan—comforting and full of flavor.
2 boneless skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
3 garlic cloves, minced
1/2 cup sun-dried tomatoes, chopped
2 cups chicken broth
1 cup heavy cream
2 cups dry pasta (penne or similar)
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
3/4 cup grated parmesan cheese
Salt and pepper, to taste
Slice and season chicken. Sear in oil and butter until golden; set aside.
In same skillet, sauté garlic and sun-dried tomatoes for 1–2 minutes.
Add broth and cream; bring to a simmer.
Stir in pasta and cook, covered, 10–12 minutes until tender.
Return chicken to pan; simmer 2–3 minutes.
Stir in parmesan. Adjust seasoning.
Serve hot with extra cheese if desired.
