Classic meatloaf topped with a tangy, sweet-savory tomato glaze that caramelizes perfectly in the oven. Ideal for weeknight dinners or hearty leftovers.

  • lbs ground beef (80/20)

  • ¾ cup breadcrumbs

  • ½ cup milk

  • 2 large eggs

  • 1 small onion, finely chopped

  • 2 garlic cloves, minced

  • 2 tbsp Worcestershire sauce

  • 1 tsp salt

  • ½ tsp black pepper

For the Glaze:

  • ½ cup ketchup

  • 2 tbsp apple cider vinegar

  • 2 tbsp brown sugar

  • 1 tsp Dijon mustard (optional

Instructions

  1. Preheat oven to 375°F. Prepare a loaf pan or baking sheet.

  2. Mix glaze ingredients in a bowl and set aside.

  3. In a large bowl, combine breadcrumbs and milk. Let soak 5 minutes.

  4. Add eggs, onion, garlic, Worcestershire, salt, and pepper. Mix well.

  5. Add ground beef. Mix gently until just combined.

  6. Shape into a loaf and place in pan. Spread half the glaze on top.

  7. Bake 45 minutes. Add remaining glaze and bake 15 more minutes.

  8. Let rest 10 minutes before slicing.

Notes

  • Try ground turkey or pork for variation.

  • Glaze can be made spicier with hot sauce.
