A warm Mediterranean-inspired dish featuring baked eggs, creamy feta, and vegetables in a flavorful tomato base.

Ingredients

1 cup cherry tomatoes, halved
1/2 cup crumbled feta cheese
4 large eggs
2 tablespoons olive oil
2 cloves garlic, minced
1 cup fresh spinach, chopped
1/4 teaspoon dried oregano
1/4 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon black pepper
2 tablespoons chopped parsley
1 tablespoon chopped basil

Instructions

  • Preheat oven to 400°F (200°C).
  • Add tomatoes, garlic, spinach, and olive oil to a baking dish.
  • Sprinkle with oregano, red pepper flakes, salt, and pepper.
  • Top with crumbled feta.
  • Bake for 10–12 minutes.
  • Remove and crack eggs over the mixture.
  • Return to oven and bake 8–10 minutes until eggs are set.
  • Garnish with fresh herbs and serve warm.

Notes

Do not overbake to keep yolks soft.
Serve immediately for best texture.
Add olives or beans for variation.
