1.5 lbs boneless skinless chicken thighs or breasts
¾ cup Greek yogurt (for marinade)
Juice of 1 lemon
3 cloves garlic, minced
2 tbsp olive oil
1 tbsp dried oregano
½ tsp paprika
Salt & pepper to taste
4–6 Greek-style pitas
1 cup cherry tomatoes, halved
½ red onion, thinly sliced
1 cucumber, sliced
Romaine lettuce, chopped
Optional: feta, olives
Tzatziki Sauce:
1 cup Greek yogurt
½ English cucumber, grated & drained
1 tbsp lemon juice
1 garlic clove, minced
1 tbsp chopped fresh dill
Salt to taste
In a bowl, combine Greek yogurt, lemon juice, garlic, olive oil, oregano, paprika, salt, and pepper. Add chicken and marinate 30 minutes to 4 hours.
Prepare tzatziki by mixing all ingredients in a bowl. Chill until ready to use.
Heat skillet or grill pan over medium-high heat. Cook chicken 5–6 minutes per side or until cooked through. Let rest, then slice thinly.
Warm pita bread in oven or skillet.
