Moist and cheesy, this Garlic Parmesan Chicken Meatloaf is a flavorful twist on the classic. Perfect for weeknights or meal prep, it’s packed with garlic, herbs, and a golden Parmesan crust.
1.5 lbs ground chicken
½ cup grated Parmesan cheese (plus ¼ cup for topping)
½ cup panko breadcrumbs
¼ cup milk
1 egg
1 small onion, grated
3 garlic cloves, minced
1 tsp Italian seasoning
1 tbsp chopped fresh parsley
1 tsp salt
½ tsp black pepper
Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.
Soak breadcrumbs in milk and let sit for 5 minutes.
In a large bowl, combine ground chicken, soaked breadcrumbs, Parmesan, egg, onion, garlic, Italian seasoning, parsley, salt, and pepper. Mix gently.
Shape mixture into a loaf on the baking sheet or in the pan.
Sprinkle ¼ cup Parmesan on top.
