Moist and cheesy, this Garlic Parmesan Chicken Meatloaf is a flavorful twist on the classic. Perfect for weeknights or meal prep, it’s packed with garlic, herbs, and a golden Parmesan crust.

  • 1.5 lbs ground chicken

  • ½ cup grated Parmesan cheese (plus ¼ cup for topping)

  • ½ cup panko breadcrumbs

  • ¼ cup milk

  • 1 egg

  • 1 small onion, grated

  • 3 garlic cloves, minced

  • 1 tsp Italian seasoning

  • 1 tbsp chopped fresh parsley

  • 1 tsp salt

  • ½ tsp black pepper

Instructions

  • Preheat oven to 375°F (190°C). Line a baking sheet or grease a loaf pan.

  • Soak breadcrumbs in milk and let sit for 5 minutes.

  • In a large bowl, combine ground chicken, soaked breadcrumbs, Parmesan, egg, onion, garlic, Italian seasoning, parsley, salt, and pepper. Mix gently.

  • Shape mixture into a loaf on the baking sheet or in the pan.

  • Sprinkle ¼ cup Parmesan on top.

  • Bake for 45–50 minutes, or until internal temp reaches 165°F.

  • Rest for 5–10 minutes before slicing.
