Seared chicken breasts simmered in a creamy basil sauce and topped with melted mozzarella for a quick, satisfying one-pan dinner.

Ingredients

2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
1/2 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup grated Parmesan (optional)
1/2 cup fresh basil, chopped
4 slices mozzarella
Salt and pepper to taste

Instructions

  • Season chicken with salt and pepper.

  • Heat oil and butter in skillet over medium-high heat.

  • Sear chicken for 4–5 minutes per side, until golden and cooked through. Remove and set aside.

  • Lower heat, sauté garlic for 30 seconds.

  • Add broth, scraping up any browned bits.

  • Stir in cream and basil. Simmer 3–4 minutes.

  • Return chicken to pan, top with mozzarella.

  • Cover to melt cheese, or broil briefly until golden.

  • Spoon sauce over top and serve.
