Seared chicken breasts simmered in a creamy basil sauce and topped with melted mozzarella for a quick, satisfying one-pan dinner.
2 boneless, skinless chicken breasts
1 tbsp olive oil
1 tbsp butter
2 cloves garlic, minced
1/2 cup low-sodium chicken broth
1 cup heavy cream
1/2 cup grated Parmesan (optional)
1/2 cup fresh basil, chopped
4 slices mozzarella
Salt and pepper to taste
Season chicken with salt and pepper.
Heat oil and butter in skillet over medium-high heat.
Sear chicken for 4–5 minutes per side, until golden and cooked through. Remove and set aside.
Lower heat, sauté garlic for 30 seconds.
Add broth, scraping up any browned bits.
Stir in cream and basil. Simmer 3–4 minutes.
Return chicken to pan, top with mozzarella.
Cover to melt cheese, or broil briefly until golden.
Spoon sauce over top and serve.
