1 lb ground beef (80/20 or leaner)
1 small onion, diced
2 cloves garlic, minced
2 tbsp tomato paste
1 can diced tomatoes (14.5 oz, with juice)
3 cups beef broth
2 cups uncooked pasta (elbows, shells, or rotini)
½ cup milk or half-and-half
1½ cups shredded cheddar cheese
½ cup shredded mozzarella (optional)
1 tbsp olive oil
Salt and pepper to taste
Optional: 1 tsp Italian seasoning, red pepper flakes, parsley for garnish
In a large skillet, heat olive oil. Sauté onion 3–4 mins. Add garlic and cook 30 secs.
Add beef and brown completely. Drain excess fat.
Stir in tomato paste, then diced tomatoes. Pour in beef broth and bring to a simmer.
Add dry pasta. Cover and cook 12–14 mins, stirring occasionally, until pasta is tender.
Stir in milk and cheeses. Mix until melted and creamy.
Season to taste and garnish. Serve hot.
