A cozy, one-pot pasta dinner featuring seasoned ground beef, tender noodles, rich tomato sauce, and loads of gooey melted cheese. Weeknight-friendly and full of flavor.

  • 1 lb ground beef (80/20 or leaner)

  • 1 small onion, diced

  • 2 cloves garlic, minced

  • 2 tbsp tomato paste

  • 1 can diced tomatoes (14.5 oz, with juice)

  • 3 cups beef broth

  • 2 cups uncooked pasta (elbows, shells, or rotini)

  • ½ cup milk or half-and-half

  • 1½ cups shredded cheddar cheese

  • ½ cup shredded mozzarella (optional)

  • 1 tbsp olive oil

  • Salt and pepper to taste

  • Optional: 1 tsp Italian seasoning, red pepper flakes, parsley for garnish

Instructions

  • In a large skillet, heat olive oil. Sauté onion 3–4 mins. Add garlic and cook 30 secs.

  • Add beef and brown completely. Drain excess fat.

  • Stir in tomato paste, then diced tomatoes. Pour in beef broth and bring to a simmer.

  • Add dry pasta. Cover and cook 12–14 mins, stirring occasionally, until pasta is tender.

  • Stir in milk and cheeses. Mix until melted and creamy.

  • Season to taste and garnish. Serve hot.
